Directions

Preparation: No soaking is required. Simply rinse the split peas thoroughly in cold water before cooking to remove any surface starch.

Cooking Instructions: Place the rinsed split peas into a large saucepan with three times their volume of water or vegetable stock. Bring to a boil, then reduce the heat to low, cover with a lid, and simmer gently for 40–45 minutes until the peas are soft and tender. If you prefer a completely smooth, puree-like consistency for soups, continue simmering for an extra 10 minutes.
