Directions & Activation

How to Revive Your Sourdough Starter:

Because this starter arrives safely dried for long shelf-life, it requires a straightforward, three-day feeding schedule to wake up the wild yeasts and bacteria before your first bake.

Activation Steps

1.Initial Hydration:Day 1.

In a clean, wide-mouthed glass jar, thoroughly mix the packet of dried starter with 30ml of lukewarm water (approx. 25-30°C) and 15g of organic rye or unbleached white flour. Cover loosely and leave in a warm spot (20-24°C) for 24 hours.

2.The Second Feed:Day 2.

You may see a few tiny bubbles. Add another 30ml of lukewarm water and 30g of organic flour directly to the jar. Stir vigorously to incorporate oxygen, cover loosely, and leave for another 24 hours.

3.The Final Wake-Up:Day 3.

The mixture should begin to look spongy and smell pleasantly fruity or sour. Feed it once more with 60ml of water and 60g of flour. Within 4 to 8 hours, the starter should double in size, become highly bubbly, and be fully ready to bake your first artisanal loaf!

Baker's Preservation Tip: Sourdough is a companion for life! Once activated, always remember to save a small portion (approx. 50g) of your starter in a jar in the fridge. Feed it once a week with equal parts flour and water to keep it thriving indefinitely for all your future baking.
