Directions

Preparation & Soaking: Unlike split peas, marrowfat peas require soaking before cooking to rehydrate their dense interiors. Place the peas in a large bowl, cover generously with cold water, and stir in a soaking tablet (bicarbonate of soda) if included, or add a teaspoon of standard bicarbonate of soda to help soften the skins. Leave to soak at room temperature for 12–16 hours (overnight), then drain and rinse thoroughly with fresh cold water.

Cooking Instructions (For Classic Mushy Peas):

Place the soaked and rinsed peas into a large saucepan and cover with fresh water (roughly 1–2cm above the peas). Bring to a boil, skim off any foam that rises to the surface, then reduce the heat to a gentle simmer. Cover loosely and cook for 45–50 minutes, stirring occasionally, until the peas break down and thicken into a beautifully creamy, mushy consistency. Season generously with salt, black pepper, and a traditional dash of malt vinegar or a pinch of sugar to taste.
