These small, round organic soya beans (also called soy beans) have a mild and sweet flavour and can be used in stews and soups. They are a key ingredient in vegetarian and vegan cooking, because the soya bean boasts similar protein levels to meat and dairy products.
Soak the beans in plenty of cold water for at least 8 hours or overnight. Rinse well and cover with water, boil rapidly for 1 hour, discard this water, then add fresh water and simmer on a low heat until tender (around 1- 2 hours). Drain and season to taste, or add to your favourite recipe.
